Maureen Timmons

MAUREEN TIMMONS ’92, EdD is the director of dining services at Northeastern University in Boston. As director, she oversees all 31 dining locations on campus that serve an average of 20,000 people per day and includes: retail and residential dining, catering, and concessions. During her multi-decade tenure, she and her team have transformed the university’s dining services in alignment with the overall growth of the institution. Northeastern’s award-winning dining program is focused on nourishing the university community and beyond through food, service, education, and sustainability. As a proud and active member of the Menus of Change University Research Collaborative (MCURC)—an initiative launched to support and amplify the Menus of Change (MOC) principles—Maureen chairs the Education Working Group and is a member of the Leadership Council, Directors of Dining Committee, and the Research Working Group. Northeastern’s membership in the MCURC initiative has helped inform and transform the food offerings and student dining habits at Northeastern. It has also offered students and faculty opportunities to collaborate with dining services and other MCURC members and institutions to conduct research in their living lab to enrich campus dining and the food system. Maureen has had a long-term commitment to amplifying collaborations between dining services, students, and faculty to enrich the overall educational experience--continually seeking opportunities to infuse learning and sharing into the dining program. She holds degrees from The Culinary Institute of America (AOS), Johnson & Wales University (BS and MS), and a doctorate of education (EdD) in higher education from Northeastern. Her dissertation, titled “Cultivating a Taste for Curricular Innovation at One University,” studies the power of food to connect the general education curriculum and highlights several institutions participating in the MCURC as exemplars in this initiative.
