Kimberly Kae dreamily started Metal House Cider, together with her partner Matt DiFrancesco, in 2015 after a few years of fermenting the untreated fruit on their small home orchard in Esopus, NY. Their objective was and is to make traditional method ciders using only sustainably grown, hyper-local, fruit, with low intervention and a long period of resting on the lees.
Their journey from picking in abandoned orchards to managing a historic one in Esopus, to planting four new acres of cider varieties, has now landed them (with great fortune, gratitude and hope) to stewarding their own orchard and new production site in New Paltz. Their dreams now include collaborating with vegetable/herb farmer and a silvopasture component, in an effort to build a small diverse farm operation within walking distance to town. (New Paltz, NY)
