Opportunities in Blue Foods - Hand-On Cooking Class

Discover the future of sustainable seafood through the lens of the groundbreaking Menus of Change principles. As the global “blue food” movement gains momentum, aquatic foods - fish, shellfish, and algae from oceans, lakes, and rivers - are emerging as powerful solutions to climate change, malnutrition, and food insecurity. These nutrient-rich, low-carbon proteins represent a critical shift toward more resilient and eco-friendly food systems.

During this 3-hour, hands-on experience. You will work with locally sourced, sustainably harvested seafood from the New York region while learning techniques, sourcing strategies, and culinary applications that bring responsible seafood to life on the plate.

Tasting samples will be included during this experience.

Plan to arrive at the CIA Hyde Park campus by 7:30 a.m. for registration, which will take place in the Marriott Pavilion (Auditorium Level).

CIA Campus Tour and Breakfast

Plan to arrive at the CIA Hyde Park campus by 8:45 a.m. for registration, which will take place in the Marriott Pavilion (Auditorium Level).

When you register onsite, we will provide a voucher for you to enjoy breakfast in the Egg (CIA’s student dining facility), where you can help yourself to any of our walk-up stations. Breakfast includes our drip coffee & orange juice or bottled water. After enjoying breakfast (9 – 10 a.m.), our student tour guides will meet you at the entrance to the Egg at 10 a.m. to take you on a tour of the CIA campus, which will conclude at the Marriott Pavilion so you can enjoy registration refreshments and networking just before the conference begins.

Wednesday, June 3rd | 6:30 - 8 PM

Hudson Valley Cider History and Tasting

This program will explore the unique history and exciting reemergence of the Hudson Valley hard cider industry. Participants will learn about the historical significance and astounding diversity of New York apple varieties. Hudson Valley cider makers will share their stories, discuss their modern versions of the ancient process of cider making, and answer questions about the potential of this exciting new industry. Then everyone will share in a curated tasting of several of the Hudson Valley’s best ciders, led by CIA faculty and the cider makers themselves.

Please check-in at the Wine-Spectator Classroom in Roth Hall at 6:15 p.m.

Cancellation Policy for Optional Summit Add-Ons: 

Cancellations are permitted up to 30 days in advance of the conference, and tuition will be refund for these activities minus a $50 administrative cancellation fee.

There are no refunds or substitutions possible within 30 or fewer days of Summit start date.
