Mary McCarthy

Vice President of Sustainability, Levy Restaurants; Forest Park, IL

Mary McCarthy joined Levy in February 2023 and is responsible for sustainability across Levy’s Sport & Entertainment, Convention Center, Cultural Attraction, and Restaurant locations around the country. Mary works with food and beverage operations teams to reduce food waste, source sustainability, and design innovative menus to address the world's multiple environmental issues. Before joining Levy, Mary worked at a non-profit, Forum for the Future, leading projects aimed at transforming the agricultural system to deliver regenerative ecosystems, provide nutritious food, and support thriving farm communities. Mary has researched the decline of biodiversity at the Museum of Natural History and the University of Michigan, focusing on the impacts of agricultural systems, and worked at a mission-based business dedicated to bringing biodiversity back into the food system.
