From fine dining restaurant kitchens to leading global food strategy at OpenAI, Spencer Plaut has built food systems and experiences from multiple angles—chef, operator, vendor partner, and client leader. A 2004 graduate of The Culinary Institute of America, he began his career in acclaimed restaurants including Gramercy Tavern in New York City and Waterbar in San Francisco before moving into corporate dining as a contracted Executive Chef at Google and Square. He later transitioned to the client side, leading large-scale workplace food programs at Yahoo, Verizon, and now OpenAI, where he oversees global food strategy and operations during a period of rapid growth from 400 to 5,000 employees. His work focuses on scaling thoughtful, high-quality food systems that bring people together through operational discipline, financial rigor, and the of AI.
