Thorsten Merkle is Professor and Head of the Expert Group for Hospitality & Service Management at the Zurich University of Applied Sciences. His research focuses on food systems innovation, climate-conscious hospitality, as well as Airport Food and Beverage Concessions. He holds a PhD in business and management as well as an MBA and brings two decades of global experience in catering, global events and service excellence.
